What you did not know about Cassava - Akpu (Cassava Fufu)

Akpu Starch (Carbohydrates) - .Very low in fat and protein however it has more protein that yam, potato and plaintains to name a few. Starches, such as those in cassava, are types of complex carbohydrates

Dietary Fiber - A serving of freshakpu contains 7.2 grams of dietary fiber, or 15 percent of the daily value. Dietary fiber lowers your cholesterol levels and helps regulate your blood sugar. Dietary fiber comes from the parts of plant foods that your body cannot digest.

Vitamins and Minerals - Vitamin C, or 70 percent of the daily value is supplied in a serving of freshakpu. Vitamin C is an antioxidant that can help your body absorb iron. It provides 56 milligrams of folate, thiamin, pyridoxine (vitamin B-6) riboflavin, pantothenic acid, zinc, magnessium, copper, iron, manganese and potassium, which helps lower blood pressure.
